The Ultimate Plum Pudding (908g)

The Ultimate Plum Pudding recipe is based on a traditional Cumbria recipe.

It is a light, delicious pudding - very different from the dark, heavy bitter puddings that the Victorians developed. They are made traditionally. The vine fruits are steeped in brandy and sherry overnight and mixed in 100kg batches. Using fresh breadcrumbs, not rusk, freshly grated carrots and apple and free range eggs. The puddings are then gently steamed without pressure until cooked and nicely coloured, but not for so long that the caramelisation causes bitterness.
